Blended Sun-Dried Tomato Pesto

Ingredients:

  • 125g sun-dried tomatoes
  • 2 tablespoons chopped basil leaves
  • 2 tablespoons chopped parsley leaves
  • 6 cloves garlic, chopped
  • 30g pine nuts
  • 1/2 small red onion, chopped
  • 4 tablespoons balsamic vinegar
  • 1 tablespoon tomato puree
  • 5 tablespoons tomato passato
  • 4 tablespoons red wine
  • 1/2 cup olive oil
  • 60g freshly grated parmesan cheese
  • Salt to taste

Preparation:

  • Place sun-dried tomatoes in a small bowl, cover with warm water and soak for 5 minutes, or until tender.
  • In your blender container combine sun-dried tomatoes, basil, parsley, garlic, pine nuts and onion and process until well blended. Add vinegar, tomato purée, passato and red wine, and process until desired consistency is reached.
  • Stir in olive oil and parmesan cheese. Season to taste with salt.
