Blended Sun-Dried Tomato Pesto
Ingredients:
- 125g sun-dried tomatoes
- 2 tablespoons chopped basil leaves
- 2 tablespoons chopped parsley leaves
- 6 cloves garlic, chopped
- 30g pine nuts
- 1/2 small red onion, chopped
- 4 tablespoons balsamic vinegar
- 1 tablespoon tomato puree
- 5 tablespoons tomato passato
- 4 tablespoons red wine
- 1/2 cup olive oil
- 60g freshly grated parmesan cheese
- Salt to taste
Preparation:
- Place sun-dried tomatoes in a small bowl, cover with warm water and soak for 5 minutes, or until tender.
- In your blender container combine sun-dried tomatoes, basil, parsley, garlic, pine nuts and onion and process until well blended. Add vinegar, tomato purée, passato and red wine, and process until desired consistency is reached.
- Stir in olive oil and parmesan cheese. Season to taste with salt.
