Rasberry Lime Ricky Ice Cream Soda Float Blender Recipe

Ingredients:

• 1 lime
• 1/2 pint raspberries
• Pinch of salt
• 1 cup French vanilla ice cream
• 2 cups lemon-lime soda
• Sugar or honey, to taste (a tablespoon or so)
• Ice
• Garnish: fresh mint sprig, lime wedge or berry (optional)

Preparation:

• Put the zest and juice from 1 lime into a blender, removing any seeds.
• Wash raspberries and drip dry for several minutes, and then add to blender with a pinch of salt. Process until smooth; add lemon-lime soda. Process until smooth. Taste and add a small amount of sugar or honey, if desired.
• Pour into a tall glass over a few cubes of ice topped by a large double scoop of vanilla ice cream.
• Serve with a straw inserted into the center of the ice cream and a long ice-tea spoon alongside. A sprig of mint, a wedge of lime or a raspberry can be used to garnish.
