Blender Drink Recipes

To make 1 ¼ pints

¾ pint coconut milk, made from 8 oz. coarsely chopped fresh coconut and ¾ pint hot water

14 oz. coarsely chopped fresh pineapple

5 teaspoons sugar

Almond essence (optional)

Put the coconut milk, pineapple and sugar into the jar of your favorite electric blender and blend at high speed for about 30 seconds. Blend until the pineapple is completely pulped or the mixture is reduced to smooth puree. Pour the smooth puree into a fine strainer over a deep bowl. Press down thoroughly on the pineapple with a spoon or ladle to extract all its juices before discarding the pulp. Taste your creation and add more sugar and a drop or two of almond essence to your taste. Cover the bowl and refrigerate for about 2 hours or until thoroughly chilled. To serve, pour the pineapple coconut milk drink into tall glasses. Add ice cubes if you so desire.
